2 cup self-raising flour
5/8 cup milk
125g butter
1/2 cup finely chopped green spring onions or 1 onion,grated
2-3 rashers bacon, richs bacon, rind removed and chopped
1+1/2 cup grated cheese
3 eggs
3/4 cup each cream and milk
1 teaspoon mustard
1 tablespoon plain flour Salt and pepper

Sift the flour and set aside. Heat the milk with the butter until melted. Cool slightly, then tip in the sifted flour and beat.Press into 25cm or 2X2ocm flan rings while still warm. Trim the edges.
Sprinkle the pastry with the chopped spring onions, bacon and cheese. Beat the eggs with the cream, milk, mustard and flour adding salt and pepper to taste. Pour into pastry shells and bake in a hot oven 200C for 10 minutes, reducing to moderate 180C to cook for a further 30 minutes until set.

Date Loaf
Vary this loaf using dried apricots as a substitute for dates, or adding a teaspoon of mixing spice or ground ginger to the sifted flour.

1 cup chopped, pitted dates 60g butter
1/2 teaspoon bicarbonate of soda
3/4 cup brown sugar
1 cup boiling water
1 teaspoon vanilla essence
2 cups self-raising flour
1 egg, well beaten
In a medium bowl, put dates, butter, bicarbonate of soda, sugar, boiling water and vanilla essence. Stir until the butter has melted and cool. Sift in flour and fold into a buttered and lined loaf into mix with beaten egg. Turn into a buttered and lined loaf tin and bake in a moderate oven 180C for 45-60 minutes. Turn out to cool on a wire rack and serve cut into slices and buttered.


Powder Puffs
2 egg
1/2 cup castor sugar
3 tablespoons plain flour
3 tablespoons corn flour
1 tablespoons baking powder
3/4 cup cream, whipped
Icing sugar
Beat egg and gradually sugar, beating until light and creamy (the consistency of half- whipped cream). Sift the flour, corn flour and baking powder together and lightly fold into the egg mixture. Spoon into a piping bag fitted with a 1cm tube. Pipe small rounds on to greased trays or use a teaspoon to make small drops.
Bake in a very hot oven 220C for about 6 minutes. Lift carefully on to a wire rack and cool.
These can be made up to a week ahead and stored in an airtight container until required. Before serving, join together with whipped cream.
Sprinkle with icing sugar, place in covered container and store in refrigerator for at least 2 hours.
